Shoulder Workout and Lots-O-Soups!

I am a day behind in posting so I will start with yesterday’s.

After work Lily and I went on a nice long run followed by a solid 30 minutes of puppy training and playing outside.

I followed my run up with an intense shoulder workout to round out my week of more focused weight workouts!

I did this shoulder workout from one of my favorite blogs, and it was killer. Trying to chop vegetables for my soup after was absolutely exhausting!

Tonight’s workout will be all about core, which I am very excited about 🙂

The Soups

I don’t know why but for some reason I have been craving soup like crazy lately! I always go through periods where I eat soup all the time and it’s all I ever want. I used to buy soup mixes and canned soup to satisfy my craving until I learned how easy it is to make your own soup!

You can literally make anything into soup and it’s the perfect total meal-in-one!

A few weeks ago I made an incredible homemade Coconut Carrot Ginger Curry Soup, all I can say is WOW. I had two bowls the night I made it and enjoyed it every day for lunch until I was licking the container clean!

It was a super easy recipe, I saw a picture of carrot coup online and was inspired to go to work. All you need is large carrots, ginger, garlic, onion, chicken broth, water, milk ( or coconut milk), curry seasoning, coconut flakes.

It was orange perfection in a bowl.image

Last night I saw an image of a creamy brussel sprout soup which made me crave a thick creamy vegetable soup like crazy. Of course I skipped the dairy products in my version, pumped it full of pureed veggies, added a little bit of broth and topped it off with almond milk and seasoning and it was heavenly.

Seriously all you need is a pot, a stove, a blender, and a little bit of inspiration and you can come up with some seriously awesome homemade soups!

Weekend Plans

This week has been a long one and I am so extremely excited it is finally Friday! First thing tomorrow morning a co-worker and I are headed to Bismark to spend the day shopping then going to the Jake Own, Eli Young Band, Parmalee, and Thomas Rett concert!

I couldn’t believe my eyes when I saw that all of these artists were going to be together in Bismark for literally next to nothing. My friend and I instantly bought tickets, booked a hotel, and planned an awesome girls weekend getaway!

Needless to say, today is dragging by with anticipation!

Hope you all have a wonderful weekend planned!
