In My Cart [IV]

I don’t know about you, but this long weekend flew by!

I celebrated with friends, slept too little, ate too much, and desperately need a good workout.

I took yesterday off, intending to get back to it today, but my plans got derailed the second I picked up a blank canvas and took out my paints!

I absolutely love creating unique items to decorate with. Its taken nearly a year, but our little townhouse is finally starting to feel like a home, and I honestly cant wait to come back to it everyday!

The only thing that could make it any better? Having Derrick in it. He has been gone working for 4 weeks and it really never gets easier. Only 10 more days until hes home in my arms again!

In between canvases [I went through 4…], I did my weekly chores, the laundry, detoxed, yoga, and even made it to the grocery store! Which leads me to the purpose of this post, chronicling my weekly shopping trip.

I kept it super simple, half the things I needed for my planned meals I already had. Leaving me with what you will find below!

Breakfast: Boiled Egg Whites + Cooked Oats + Fruit [I already had oats at home]
Lunch: Baked Chicken Salad + Black Beans + Brown Rice [I already had salad and black beans at home]
Snack: Fruit + Raw Nuts + Yogurt w/ Honey and Chopped Nuts
Dinner: Salmon + Brussels Sprouts + Sweet Potato [I already had salmon at home]

In my cart-

1 Carton of Eggs
4 Sweet Potatoes
5 Bananas
5 Apples
2 Packages of Brussels Sprouts
1 Container of Greek Yogurt
1 Red Onion
1 Bottle of Honey
1 Bag of Sliced Almonds
1 Contained of Blueberries

TotalΒ  Cost = $45.00
Total Cook Time (shopping not included) = About 1 hour. I hard boiled the eggs, threw the chicken and sweet potatoes in the oven while I cooked a batch of oats and everything was done within the hour.

I have found I am so much less stressed when I keep my meals super simple. For a while I would plan somewhat extravagant ‘clean eating’ meal plans which required hours every weekend in the kitchen. I would much rather be getting ready mentally for the week and recharging than worrying about timers and dirty dishes, so I have significantly scaled back!

Additional, I have decided to work cheese and other dairies [other than yogurt] out of my diet again. I did not eat them for a long time, but more recently picked up the habit of a slice or 2 of cheese in the afternoons. While I absolutely love cheese, it really doesn’t sit well with me.

Its always hard realizing its time to give something up when your just not ready to!

…even if its just food.
