Best Ever Nut Butter Muffins

Ok, I need to tell you about the little bites of heaven that are these muffins.

First off, I’m currently 3 weeks into a 12-week *home* lifting program I’ve created, a.k.a. sore everywhere all the time and starving. As in reach for a bag of cookies because I don’t even care anymore, starving.

I can tell when I am either 1. not eating enough or 2. not drinking enough water because I start craving sweet pastries and baked goods. Im a savory person myself, so if my brain is saying all that sounds good is a muffin (I don’t even like muffins) then something’s off!

In comes my efforts to find a suedo whole-30/paleo friendly version of a muffin that acts more as a protein bar than its coffee shop counter part.

Quick note, while these are technically ‘nut butter friendly’, I found that this recipe works best with natural nut butters (as in the ones with a layer of their natural oils on top). This helps with moisture and the muffin-esque texture I’m currently dying for.

These more than squashed my cravings while helping me meet my daily macro/micro goals!

Gluten Free Paleo Chocolate Chip Nut Muffins


Time: 30 Minutes
Difficulty: Easy
Servings: 1-12

Inspired by: Real Plans’, Cashew Butter Muffin Recipe

– 1/2 Cup Nut Butter
– 1 Banana
– 2 Whole Eggs
– 1/4 Cup Honey
– 1/3 Cup Coconut Flour
– 2 Tbs. Coconut Superseed Blend (or Ground Flaxseed)
– 1 Tsp. Vanilla Extract
– 1 1/2 Tsp Baking Powder
– 1/4 Cup Dark Chocolate Chips or Carob Chips


1. Preheat oven to 375 F and prepare a muffin tin with oil, grease, or muffin cups.
2. Mix all ingredients together in a blender or food processor except chocolate chips and blend until batter consistency.
3. Stir in chocolate chips and fill muffin cups 1/2 full.
4. Bake for 13-15 minutes, or until cooked completely.
5.  Let cool and enjoy!



Ok, full disclosure I hardly let them cool, ate two right out of the oven, and they were everything. These barely made it 3 days in my house being Derrick and my diet approved, I will be doubling the batches from here out!
